Costa vs. Rio vs. Bajio

Costa Vida, Cafe Rio, and Bajio– all similar in style and taste… but just how similar are they?

For the longest time Costa Vida was at the top of my list with its sweet pork nachos, closely followed by Cafe Rio and their sweet pork nachos (to me, Costa’s sweet pork was slightly superior) and trailing far, far behind it was Bajio whose overall menu I’ve never had a positive experience with. But it seems all of that has changed now.

Ever since my cousin Eduardo has been working at Bajio, I’ve been eating their food more and have actually begun to like it– well more than just like it– I love it:

  • Their Chicken Green Chile (better than the sweet pork of Costa or Rio)
  • Their sweet rice is amazing
  • I’ve warmed up to their beef, seeing that it isn’t shredded beef like other places (not a fan of shredded ANYTHING)
  • Their mango salsa on their salads… wow

It’s strange to look back and think that I didn’t like this place. Although, this could be due to the fact that my last few experiences at Costa have been less than stellar. I was underwhelmed by what I ordered there, and usually I’m drowning in a sea of greatness when I’m there.

So my new order of love is: Bajio, with Cafe Rio and Costa Vida tied a few steps behind. That being said, Costa will always hold a special place in my heart due to the fact that for a period of a few months, Natalia and I went there once a week every week. The memories. :D

Which is your favorite?

Natalia: I hate to disagree with Luis, given that this is only his first personal post on our newly merged blog, but I must. While the Chicken Green Chile at Bajio is good, it comes nowhere near touching the goodness that is sweet pork from Costa Vida/Cafe Rio.
I think the problem is that a certain person has simply visited those establishments much to often to really appreciate how good the sweet pork truly is. For any such persons, I would advise taking a break for a few weeks and then returning to truly savor the goodness once again.

A New Beginning

Luis: Seven months ago Natalia and I had presented the idea of merging blogs… if you remember from Natalia’s post, or from mine, (note the responses).

Well, it has finally happened– our blogs our now in one place! After hearing the general opposition from our audiences to a possible merger, (as expected) Natalia was actually warming up to the idea… so we came to a compromise: create side-by-side blogs. An idea that didn’t actually pan out…

Natalia: I don’t remember most of these happenings. I do remember, however, that I had come up with this great concept of have one main blog, our individual posts would show up there side-by-side but we would also each retain our individual blogs (in order to preserve our individuality).

Back in June when we were in Hawaii, Luis started working on my new, revamped blog. Unfortunately, he never quite had the desire to finish it (I secretly think he was just dilly dallying and hoping that I would just eventually give in to merging… which I did). So last week when he brought up the topic of merging, I thought it might be kind of fun to be able to play off of one another’s posts. And I think he did a great job with the layout. So now I’m starting to question why I hadn’t thought this was a great idea in the first place.

Luis: Finally! A little credit for one of my better ideas. :)

Seriously though, many had mentioned that if we were to combine our blogs, we would be losing a sense of each of our individuality which is not at all the aim of Mertinso.com. This blog might represent one, single stage, but there are two clear and distinct voices, with separate personalities, interests, passions, and quirks.

So we both hope you enjoy the new Mertinso.com.

I thought I was going to run out of gas on my way home the other night. The worst part was that I was stuck in the middle of this crazy traffic jam on the freeway. For some reason, running out of gas is seriously one of my worst nightmares. I start feeling like I’m going to have an anxiety attack if I don’t get gas in my car very soon after the light goes on.

I’ve noticed that when it comes to cars, Las Vegas has everything from the extremely expensive exotic cars to the most hideous clunkers you could imagine. I recently came across this beauty:

I’m not sure who this car belongs to, but I’m thinking they are sports fans. I could be wrong, though.

waking up

Does anyone else wake up at the exact same time everyday to go to the bathroom. I do. For a while I was waking up exactly an hour before my alarm clock, which was ok because I would always just go right back to sleep. But these last few days, I’ve been waking up about 15 minutes before my alarm clock rings and it is so annoying because those 15 minutes make a big difference.

So after my fun night of going out, I came home starving (what is it about walking in the door that makes me want to go straight to the refrigerator… given that I usually get home at dinnertime, I guess it is just habit). But since it was past midnight already, I decided to just ignore my stomach and go to bed. Of course, that just meant that I woke up feeling like I just HAD to eat something and my usual Diet Coke breakfast at work just wasn’t going to cut it. I completely forgot that I even had any sort of breakfast food at my house so I headed to McDonald’s on my way to work to grab a quick Egg McMuffin (I love those little things!).

So I pull in to the drive-thu and this is what I see:
Now, if you look beyond the GIGANTIC truck in front of me, you’ll see a woman. Standing. Outside of her car. I’m not sure where this woman in from, but in Las Vegas, we usually just roll down our windows to place our orders. Getting out of your car is completely NOT NECESSARY!

So Luis accidentally left his driver’s license at the Mandalay Bay box office when he went to pick up our Lion King tickets. The casino kindly offered to FedEx the license to us, but for some reason, instead of Luis having the license sent to him in Utah, he had it sent to our place in Nevada. So FedEx tried to deliver the package, but I was at work and couldn’t come home to sign for the package. They then left a note on the door. After 2 more attempts, they finally sent the package back to their warehouse so I could come pick it up myself. So after work, I set off to go find the place. After several twists and turns, I ended up here: And let me just say, the picture does not do this place justice. It was this random scary place in the middle of nowhere. I had to drive through the first set of gates, then walk through another one and then finally go into this big open area with no counter or anything to ask for the package. Had I known that it was going to be this much trouble, I would have just asked the casino if I could go pick it up from them directly.
