freezer meals

I know a lot of people and bloggers who make good use of freezer meals. So before going back to work, I decided I needed to take an afternoon to make a bunch of meals that I could freeze to eat over the next month.

I started off with this blog for ideas and help organizing, and then made my plan

Ok, ok, so I had a head start because half of what was on the lower shelf were meals my mother in law left for us, but I made everything on the top 2 shelves and then divided them into nightly meal portions. I did leave out 2 days a week (one of which we always go out to eat and then I usually like to cook a bigger meal on Sundays).

You may be wondering what in the world cinnacakes could be. Well wonder no more. They’re what you get when you combine cinnamon rolls and pancakes (duh). And how would you go about doing that? Simple. You start with pancake batter:

Add a swirl of cinnamon-sugar goodness:

And then top it off with a cream cheese glaze. No, I don’t have a picture of it. It was too delicious to stop to take a picture, so just imagine a sugary/cream cheesy glaze on top of the pancakes. I won’t take credit for coming up with this recipe, though. I got it here.

P.S. I made them again the following day, trying a shortcut by using the just-add-water pancake mix and it didn’t work very well. So take it from me, it is worth the effort to make the cakes as the recipe dictates.

too long, a little too long

When it comes to cooking, I usually do a pretty good job. Baking desserts? Piece of cake. But for some reason (i.e. a lack of practice, and possibly talent), I have yet to master the art of bread baking. And honestly, I’m ok with that. Sure, fresh homemade bread is wonderful. But if I knew how to bake it properly, I would probably do it all the time and be 100 lbs heavier than I am now.

Last Sunday I was making a roast for dinner and decided we needed some rolls to go along with them. Now, before you think I’m some domestic goddess, let me point out that they were Rhodes rolls that only needed to be pulled out of the freezer, allowed to rise for a couple of hours, and thrown in the oven (ok, now that you know that, if you still think I’m a wonderful wife for giving Luis something other than sliced bread, go right on ahead). Anyway, I pulled the rolls out of the freezer as soon as we got home from church, thinking this would allow sufficient time for them to defrost and rise before dinner. The only thing I didn’t account for was the possibility of the rolls sitting out a little too long and rising a bit too much, which resulted in this:

But hey, at least I didn’t burn them :)

no, they’re not plastic

I made stuffed peppers last night for Luis’ after-work din-dins. I had never made these before, and ended up putting too much cheese over the top of them… which is why they look a little on the plastic side. But trust me, they’re not plastic. They’re 100% real. And they taste pretty good too.

my dirty little secret

We all have secrets. This just so happens to be one of my dirty little secrets. I’ll tell you what it is if you promise not to tell anyone. Promise? Ok, here it goes… I’m a tupperware tosser. Don’t know what that is? A tupperware tosser is someone who feels no remorse for throwing away tupperware.

You see, any time I make more food than we can eat in one sitting, we put the left-overs into a tupperware (ok, not really a “Tupperware” because I don’t own any plastic containers of that brand, but you know what I mean, right?). We then eat it for one more meal and get sick of it. The left-overs stay in the fridge for who knows how long. Until it finally starts to grow mold. And then I don’t have the guts to open the container. So I just throw the entire container in the trash.

The problem? When I need more tupperware, I have to remember to buy more. So what happens when I decide to cut up an entire watermelon and forget that I don’t have enough storage for that much fruit? Simple. I resort to ziplock bags :)

 

my husband is very, very lucky

Why? Because he is married to ME of course! And even though I was invited over to a friend’s house for delicious tacos for dinner tonight (and Luis couldn’t make it because he was teaching), I still came home and made him din-dins…

Ok, so maybe I was a little motivated by the fact that I’m sick and tired of eating fast food for lunch, and making dinner would mean there would be left-overs for me to take to work tomorrow.
